Ingredients
☑ 1 whole chicken on the bone cut into 8 pieces
☑ 2 medium onions sliced finely
☑ 4 tbslpn of passata or half a tin of plum tomato
☑ 1 tblspn ginger
☑ 1 tblspn garlic
Whole Spices:
☑ 1 tspn whole cumin
☑ 1 stick of cinnamon
☑ 3 cardamom pods
☑ 1 bay leaf
Spices:
☑ ½ tspn turmeric
☑ 1 tspn paprika
☑ 1 ½ tspn cumin and coriander powder
☑ ½ tspn garam masala
☑ Salt and chilli powder to taste
Method:
✔ In a heavy bottom pan, add 1 tblspn of oil and let it heat up.
✔ Add whole spices and let them sizzle in the oil for 5 minutes.
✔ Add sliced onions and cook on medium-low heat until the onions brown.
✔ Add chicken and cook on low heat until the chicken is half cooked through.
✔ Add tomato pasta/ tinned tomatoes and all the spices.
✔ Cook the mixture for 10 minutes on medium low heat.
✔ Add enough just cover the chicken, cover the pan and simmer for 20-30 minutes n low heat.
✔ Garnish with coriander.
